It's one thing to pin a recipe, it's another to actually try that recipe, and it's another thing altogether to use that recipe again and again. In this little series I bring you the pinterest recipes that I love and use over and over again.
Today's recipe is from the Gourmet Worrier. I have lost count of the number of times I have baked these cookies. They are so easy to through together & the recipe does not require eggs. This is something that comes in handy for me as we never seem to have any eggs when I want to bake something.
The cookies are versatile too. At Christmas I add a coloured sugar sprinkle to the top just before they go into the oven and wa la you have Christmas cookies. No cinnamon? Just add ginger instead and you have a yummy cookie.
Here's the recipe:
75gm unsalted butter
1/3 cup of brown sugar
1/3 cup golden syrup
2 tsp ground cinnamon
1 ½ cups of flour, sifted
1 tsp of baking powder
1. Preheat the oven to 180C/375F. Combine the butter, golden syrup and brown sugar in a saucepan. Over a low heat, gently melt the butter and dissolve the sugar and syrup together without boiling.
2. Set aside and allow to cool for 10 minutes. Then stir in the cinnamon, sifted flour and baking powder and mix until well combined.
3. Roll heaped teaspoons full of the mixture into small sized balls and place 5 cm apart on a tray that has been lined with baking paper. Flatten gently with a fork.
4. Bake for about 10 minutes or until they are slightly browned.
